Peanut Butter Chia Pudding Recipe

Ingredients:

  • 30 grams of chia seeds (about 2 tablespoons)

  • 1 cup (240 ml) almond milk (or any milk of your choice)

  • 1-2 teaspoons sweetener (honey, maple syrup, or agave syrup)

  • 1 tablespoon peanut butter (smooth or crunchy)

  • 1/2 teaspoon vanilla extract (optional)

  • Fresh fruits, chopped nuts, or granola for topping (optional)

Instructions:

  1. Mix the Ingredients:

    • In a glass jar or bowl, combine the chia seeds, almond milk, sweetener, peanut butter, and vanilla extract if using.

    • Stir well, ensuring the peanut butter is well incorporated with the liquid and chia seeds.

  2. Let it Set:

    • Cover the jar or bowl and place it in the refrigerator.

    • Allow the mixture to sit for at least 4 hours, or overnight, so the chia seeds absorb the liquid and create a pudding-like texture.

  3. Stir Again:

    • After about an hour in the fridge, give the mixture another stir to prevent clumping and ensure even distribution of the chia seeds and peanut butter.

  4. Serve and Enjoy:

    • Once the pudding has thickened, it’s ready to serve.

    • Top with fresh bananas, a drizzle of extra peanut butter, or a handful of granola or chopped nuts for added texture and flavor.

  • Chocolate Peanut Butter Chia Pudding: Add 1 tablespoon of cocoa powder for a rich, chocolatey flavor.
