One-Pot Blended Lentil Tofu Soup Recipe
Serves: 4
Ingredients:
1 cup dried red lentils, rinsed and drained
6 cups vegetable broth or water
1 block (14 oz) firm tofu, drained and cut into cubes
1 onion, roughly chopped
2 cloves garlic, peeled and smashed
1 tablespoon olive oil
Salt and pepper to taste
Instructions:
Sauté the Aromatics:
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and sauté until softened, about 5 minutes.
Add the smashed garlic cloves and cook for another 1 minute until fragrant.
Add Main Ingredients:
Add the rinsed lentils and tofu cubes to the pot.
Pour in the vegetable broth or water.
Cook Everything Together:
Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the lentils are tender.
Blend the Soup:
Use an immersion blender to carefully blend the soup until smooth.
If you don't have an immersion blender, let the soup cool slightly and blend it in batches using a regular blender. Be cautious with hot liquids.
Season and Serve:
Season the blended soup with salt and pepper to taste.
Reheat if necessary, then ladle into bowls and serve hot.
