One-Pot Blended Lentil Tofu Soup Recipe

Serves: 4

Ingredients:

  • 1 cup dried red lentils, rinsed and drained

  • 6 cups vegetable broth or water

  • 1 block (14 oz) firm tofu, drained and cut into cubes

  • 1 onion, roughly chopped

  • 2 cloves garlic, peeled and smashed

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

  1. Sauté the Aromatics:

    • In a large pot, heat the olive oil over medium heat.

    • Add the chopped onion and sauté until softened, about 5 minutes.

    • Add the smashed garlic cloves and cook for another 1 minute until fragrant.

  2. Add Main Ingredients:

    • Add the rinsed lentils and tofu cubes to the pot.

    • Pour in the vegetable broth or water.

  3. Cook Everything Together:

    • Bring the mixture to a boil.

    • Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the lentils are tender.

  4. Blend the Soup:

    • If you don't have an immersion blender, let the soup cool slightly and blend it in batches using a regular blender. Be cautious with hot liquids.

  5. Season and Serve:
