Baked Tofu & Veggie Medley

Ingredients:

  • 1 block firm tofu, cubed

  • 1 medium eggplant, diced

  • 2 large tomatoes, chopped

  • 1 onion, sliced

  • 1 bell pepper, chopped

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1 tsp dried oregano or thyme (optional)

  • 1 tsp paprika (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, combine the tofu, eggplant, tomatoes, onions, and bell peppers.

  3. Drizzle with olive oil, then add minced garlic, salt, pepper, and your choice of spices (oregano, thyme, or paprika). Toss everything to coat evenly.

  4. Spread the mixture evenly in a large baking dish.

  5. Bake in the oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized, and the tofu is golden.

  6. Serve hot as a main dish or a side, and enjoy!
